Jambalaya ala Casey Viator...

This Jambalaya taste so good it will leave you wanting seconds! We hope you enjoy it as much as we do! Recipe adapted from: Sliced. 

Makes 2 servings

1 1/2 teaspoons Coconut oil (you may use a healthy oil of your choice like olive oil, but remember, it does not tollerate the high heat as well)
1/4 cup dry red wine
1/2 onion, chopped
1/2 cup sliced celery
1/2 each green and red bell pepper, diced
1/2 clove garlic, crushed
2 ripe tomatoes, pureed
8 ounces shrimp, cooked
1 cup rice, cooked
Dash each of crushed bay leaf, chili powder, thyme, and black pepper

In a large skillet, heat Coconut oil. Add onion, celery, red and green pepper, and garlic. Saute until crispy tender. Add remaining ingredients, cover, and let simmer until heated through.
