Tomato Spinach Scramble

You may use whole eggs, egg substitute or egg whites for this recipe
depending on your specific needs.
Makes 1-2 servings
1 fresh tomato
1 cup spinach leaves, cleaned thoroughly
2-3 whole eggs or 6 egg whites
1 1/2 ounces feta cheese, crumbled
1 tablespoon fresh basil, chopped
1/2 -1 tablespoon of butter or nonstick spray for pan
In a small to medium size pan, saute tomatoes and spinach until slightly tender. Remove and
set aside.
Whisk the eggs in a bowl and add to the pan. Cook, stirring over low heat until almost set. Add the
vegetable mix, cheese, and basil. Cook to desired firmness. Serve immediately.
